Zucchini and asparagus ribbon eggs

This is a perfect one skillet eggs recipe cooked with herbs,vegetables and lots of fresh parmesan cheese.It’s the simplest recipe that doubles as both a mouth-watering breakfast and a quick and easy dinner.Bonus?This takes no more than fifteen minutes to prepare,is healthy, and delicious.






Some of the ingredients used in this recipe are





Ingredients


Eggs-2

Salt and pepper

Sliced zucchini- a few slices

Asparagus (blanched)- a few

Micro greens- a few

Chipotle chillies/chilli flakes- (as per taste)

Baby spinach leaves-a few.

Fresh cream/creme fraiche- 1/2 tbsp

Olive oil-1 teaspoon

Garlic- 1 clove


Method


1.Preheat the oven at 180 C.


2.In a bowl gently beat the eggs.


3.In a cast iron pan, add olive oil and then add the garlic,sliced zucchini,asparagus,chipotle chillies,salt and pepper. Fry it gently for 2 min. Once done, add the beaten eggs on top of the vegetables and cook for one min.Add the creme fraiche/fresh cream on top of the eggs.


4.Transfer this pan into the preheated oven and let it bake for 1- 2 min.


5.Remove the pan from the oven and fold the egg gently and serve hot.Garnish with micro greens,a garden salad/baby spinach,lots of parmesan cheese and a drizzle of balsamic vinegar



Health/Cooking Tip

1.You can add different types of mushrooms/sundried tomatoes to this recipe for more flavors /variations.

2. If using mushrooms, peel off the top skin/layer of the mushroom and gently clean all the dirt from it by using a damp cloth/ napkin. Avoid washing the mushrooms as it would absorb a lot of water like a sponge and that would change the flavour and texture of the dish.

3 Always bake the eggs in a preheated oven of atleast 10 min.
