These avocado sandwiches are perfect for a light lunch or an evening snack and are pretty much the ultimate weekday quick and easy meals. Some of the ingredients used in this recipe
Ingredients for the sandwich
Guacamole/mashed avocado -2 tbspn
Mayonaise-1 tbsp
Whole wheat baguette/any healthy bread- 2 slices toasted
Cucumber-peeled and sliced- a few slices.
Lettuce-(optional) a few.
Micro greens for garnishing.
Fresh parmesan cheese -as per taste
Ingredients for the guacamole
Avocado- 2 riped
Juice of lemon- 1
Red or yellow pepper- 1 tsp
Salt to taste
Olive oil- 1 tsp
Method for guacamole
1.In a bowl add avacado,lemon juice,diced peppers and salt.
2.Now with a fork mash it and give it a good mix. .
3.Drizzle olive oil. Serve with healthy nachos, sandwiches or as a dip.
Method for assembling the sandwich
1.Toast the sliced bread and add the guacamole.Garnish with sliced cucumber, lettuce and micro greens.Grill is slightly.Serve warm
Health/Cooking Tips
1.Use multigrain or any whole grain healthy bread instead of white bread which is made with refined flour.
2.You can also use hummus instead of mayonnaise for a unique flavour.
