All of our growing up years,my mother used to prepare and give us this warm and gorgeous quinoa museli for breakfast every morning before going to school. And now,I do exactly the same thing with my kids.It is by far one of the best breakfast recipes ever.Its quick,easy, delicious,healthy and is very popular especially amongst kids.
These are some of the ingredients used in this recipe.
Ingredients
Rolled/steel cut oats- 75 gm
Quinoa- 1/2 cup cooked
Full fat milk/almond milk- 200 ml
Fresh apple juice- 25 ml
Lemon juice- 1 tbspn
Apple/pear -peeled chopped into small cubes.
Raw honey- 1 tbspn(optional)
Plain yogurt- 150 gm
Roasted almonds/cashew nuts- a handful (chopped)l
Raisins-a handful chopped
Fresh berries(optional)- as per taste
Desiccated roasted coconut- 2 teaspoon.(optional)
Method
1.Cook the oats and quinoa and keep it aside.
2.Combine the cooked oats,quinoa,milk,apple juice and lemon juice.Let it rest overnight in the refrigerator.
2.Once done,add freshly chopped apple and other fruits of your choice,yogurt,dried fruits,coconut and nuts.Mix well and serve cold.
Health /Cooking Tips
1.Use organic steel cut oats/rolled oats which are very high in fibre instead of commercial /instant oats which are highly processed and can be cooked quickly and easily.
2.You can prepare this dish a night earlier and keep it in a serving bowl if you need to serve it in the morning as this would make it a lot easier,quicker and also make the oats a lot more softer. Add dash of milk before serving.
