Vegan Quinoa Museli


This Vegan muesli is not only flavourful but is full of anti oxidants, protein, fibre and good fats. It takes just 15 minutes to prepare and is absolutely delicious.






Some of the ingredients used in this recipe are







Ingredients


1/2 cup quinoa, rinsed and drained & cooked

1/4 cup rolled oats (optional)

1/4cup chopped nuts (almonds, walnuts, or hazelnuts)

1/4cup mixed seeds (sunflower, pumpkin, or chia)

1/4 cup dried fruits (cranberries, raisins, or apricots)

1 tablespoon raw brown sugar or as per taste./ honey (if you are not vegan)

Pinch of salt

Fruits of your choice(I’ve used grated apple ,blueberries,pomegranate)

Coconut milk(enough to soak the quinoa) or Full Fat milk (Non vegan option)

Coconut flakes -1 tbsp

Vanilla extract -1 tsp

Hung curd - 1 tbsp



Instructions


1.In a bowl, mix quinoa, oats, nuts, seeds,honey ,coconut flakes , vanilla ,brown sugar ,grated apple , yogurt and mix it well.


2.Keep it refrigerated overnight.


3.Once done , toss it well ,transfer into a serving bowl , garnish it with fruits of your choice and serve cold.
