This refreshing vegan salad is not only healthy , but it’s quick to prepare and extremely delicious. It’s full of anti oxidants , is very nutritious and perfect as an appetiser or a light dinner .
Some of the ingredients used in this receipe are
Ingredients for the salad
Kale -65 gm
Lemon juice-1/2
Olive oil -1.5 tbsp
Quinoa cooked -1/2 cup
Pistachios chopped -a handful
Pumpkin seeds-2 tbsp
Oranges sliced -1/2 orange
Mint leaves- for garnishing
Ingredients for the dressing
Cashew /Almond/Peanut butter -1.5 tbsp
Rice wine vinegar -1 tbsp
Honey /raw brown sugar -1 tbsp
Djorn mustard -1 tsp
Lemon -1 tsp
Onion -1/2 tsp
Ginger -1/2tsp
Salt & pepper -to taste
Directions
1.Assemble the salad in a bowl and set it aside.
2.In a bowl , add all the ingredients of the dressing , mix it well ,pour it on the salad and toss it well.
3.Garnish with chopped pistachios ans micro greens/mint leaves . Serve cold .
