This is a refreshing salad which is easy to prepare, healthy and absoluetly delicious.
Some of the ingredients used in this salad are
Ingredients for the Vegan cashew paste
1 cup raw cashews
½ cup water
2 large limes juiced
½ tsp salt
Ingredients for the salad
2 medium tomatoes cubed
½ cucumber sliced
5-6 pitted olives halved
1 tsp capers
1 tsp toasted almonds toasted
1 tbsp fresh dill finely chopped
1/4 onions slices
Lemon Herb Dressing
½ lemon juiced
1 tbsp red wine vinegar
2 tbsp roasted tahini/hummus
2 tbsp water
1 tsp maple syrup
½ tsp garlic minced
1 tsp basil chopped
Salt and pepper to taste
Directions
1.Mix the ingredients of the dressing and keep it aside.
2.In a blender add the ingredients of the cashew paste , blend until it’s a smooth paste.
3.In a bowl add the ingredients of the salad , along with the cashew paste and pour the dressing on top . Toss it well and serve.
