Tomato & basil soup


This creamy and delicious“Tomato & Basil soup”is one of my favourite recipes and is a must try. This recipe is very easy , quick and most importantly very healthy! And guess what? My kids ask me to prepare this soup every week ! It must mean something…right?







Some of the ingredients used in this recipe are




Ingredients


Olive oil- 1 tbsp

Butter-1 tsp

Tomatoes-3

Bay leaf -1

Garlic-2(chopped)

Onion-1/2 (finely chopped)

Carrot-1/2 (finely chopped)

Water -1 cup

Basil leaves -4-5

Cream-as per taste

Salt & pepper-as per taste

Croutons-For garnishing (preferably multigrain/whole wheat)


Directions

1.In a saucepan, add water & let it boil . Add the tomatoes and let them boil for 10 minutes on high flame until they are well cooked and the skin is almost peeling off. Once done, switch the gas off .


2.Strain the tomatoes ,peel the skin off , roughy chop them and transfer them in a bowl.


1.In a pan, add olive oil ,butter ,bay leaf,garlic ,onion and let it fry for a few minutes until slightly brown.


2.Add carrots ,sauté it for a few minutes & cooked tomatoes purée , water ,basil leaves, salt & pepper and let it cook for 10 min.


3.Once done, remove the bay leaf, and transfer this mixture in a blender and blend it well until it’s of a smooth consistency.


4.Transfer this in pan , gently stir this on low flame for a minute . Transfer this delicious soup in a bowl. Garnish it with cream and croutons and serve hot.
