This spicy Thai tom yum soup is made with lemongrass, galangal, mushrooms, chicken and lots of herbs and is highly addictive ...Yum!!!
Some of the ingredients used in this recipe are
Ingredients
Olive oil-1 tbsp
Garlic-2 cloves
Onions/shallots- 1/2 chopped
Red Thai chili paste- 1 tbsp
Lemongrass-finely chopped-1 tbsp
Palm/Raw brown sugar-1 tsp
Galangal- 1/2 tbsp
Kaffir lime leaves-4-5
Red Thai chili- 1
Chicken stock-1/2 cup
Fish sauce-1 tbsp
Boneless chicken cibes-4-5 pieces
Mushrooms-2 sliced
Coconut milk-1 cup
Coriander leaves -for garnishing
Method
1.In a pan add olive oil, garlic ,onions and fry for 2 min. Add the red Thai curry paste and continue frying.
2.Add the lemongrass, palm sugar, galangal,kaffir lime leaves,Thai chili,chicken stock,fish sauce, chicken,mushrooms and coconut milk.Let it simmer for ten min or until cooked.
3.Garnish with coriander leaves and serve hot.
