Thai style spicy chicken with peppers & holy basil

When it comes stir fried chicken, this recipe is one of the most popular and easiest to prepare. My version of this classic dish has a spectacular taste and works best if you chop and have all the ingredients prepped up before you get started






Some of the ingredients used in this recipe are





Ingredients


  • Olive oil- 1 tbsp

  • Red Thai curry paste- 1 tbsp

  • Onion-1/2 chopped

  • Mixed coloured peppers-2 tbsp

  • Boneless chicken cubes- 100 gm

  • Basil leaves- 5-6 finely chopped

  • Kaffir lime leaves-3-4 finely chopped

  • Palm sugar/raw brown sugar-1/2 tbsp

  • Fish sauce- 1 tbsp

  • Thai red chili-1


Method


1.In a pan,add olive oil,red curry paste ,onion,peppers and fry it for a minute.


2.Add the chicken, basil,kaffir lime leaves, palm sugar ,fish sauce and Thai chili and give it a good mix.Let it cook for ten minutes or until the chicken is nicely cooked. Garnish with fried basil leaves and Thai chili. Serve hot.



Health/cooking tips 

1.You could use organic soya granules as a healthy vegetarian option


2.Use palm sugar/raw jaggery powder/raw organic brown sugar for a more authentic flavour and a healthier option
