These are my Thai style grilled chicken skewers served with a a nutty, delicious and an almost addictive home made peanut sauce.It just doesn’t get better than this.Its simple, healthy, colourful, super flavourful and really delicious.A fun switch-up from the usual chicken dinner.
Some of the ingredients used in this recipe
Ingredients for the chicken
Boneless chicken cubes- 250 gm
Coconut milk -2 tbsp
Raw brown sugar/palm sugar-1 tsp
Thai red curry paste-1 tablespoon
Ginger (grated)- 1/2 teaspoon
Lemon zest of 1 lemon
Peanut butter-1 tbsp
Fish sauce-1/2 tablespoon.
Basil- 4-5 leaves finely chopped
Kaffir lime leaves- 2-3 finely chopped
Roasted peanuts (crushed)- 1.5 tbsp for garnishing
Directions
1.Marinade all the ingredients of the chicken(except the crushed peanuts) and keep for 30 min.
2.Insert toothpicks /satay sticks inside the chicken pieces (3 cubes in one stick)
3.In a frying pan,add olive oil and fry the chicken skewers on both the sides until done.
4.Garnish with crushed peanuts,lemon wedges,Thai chilli and fried basil.
5.Serve with home made peanut sauce.
Ingredients for the peanut sauce
Organic peanut butter- 1.5 tbsp
Raw brown sugar/palm sugar -1 tsp
Lemon juice-1/2 tsp
Sesame oil-1/2 tsp
Garlic- 2 cloves finely minced
Warm water/stock- 2 tbsp
Fish sauce-1 tbsp
Red curry paste- 1/2 tbsp
Sesame seeds-1/2 tsp
Coconut milk- 2 tbsp
Directions for the peanut sauce
In a bowl, whisk all the above ingredients together until its a smooth paste. Add a little more water if required to get the desired consistency. Serve warm along with the chicken satay.
Healthy Tips/Cooking tips
1.For a vegetarian option,add vegetables such as cottage cheese, mushrooms,peppers, onion and broccoli.
