Thai style chicken cutlets with chilli and kaffir lime leaves.

These Thai style cutlets are extremely succulent ,easy to prepare and are perfect to serve as an appetiser.






Some of the ingredients used in this recipe are







Ingredients


Chicken -300 gm

Egg yolk-1

Green beans (blanched and chopped)-2-3

Kaffir lime leaves-8-10

Red Curry paste- 3 tbsp

Palm sugar/Raw brown sugar- 2 tsp

Fish sauce-3 tbsp



For the paste


Coriander root- 2 tbsp

Garlic-5-6 cloves

White pepper- 1.5 tsp



For the garnish

Fried basil-

Big red Serranno chilli



Method


1.In a mortar and pestle, pound the garlic, white pepper and coriander roots into a smooth paste.


2.In a mixing bowl take the minced chicken,,add all of the above ingredients including the paste and mix it well.


3.Make small round flattened cutlet shaped balls and keep 6them aside.


4.in a frying pan, add little oil and fry the cutlets until done. Garnish with Red chilli and fried basil.
