Ingredients for the dressing
Thai red chili-1 chopped
Lemon juice- 1 tbsp
Fish sauce-1 tbsp
Organic jaggery powder/palm sugar- 1.5 tbsp
Method
Put all the ingredients in a bowl and mix it well.
Ingredients for the salad
Lettuce leaves- a handful
Pineapple-1/2 cup
Extra virgin olive oil-1 tbsp
Onion rings- a few
Roasted peanuts-1 tbsp
Pumpkin seeds-1 tsp
Mint leaves- a few
Method
Assemble the salad in a bowl,pour the dressing on top of the salad and give it a good toss.Garnish with walnuts.Serve cold.
Health/cooking tip
1.You could also add a variety of different fruits to this recipe such as kiwi or pomegranate or even add some grilled chicken for a variation.
