Thai pineapple salad with a chili lime dressing

Thai flavours are fresh and bold. With a beautiful mix of spice ,sweetness and tanginess this salad is a perfect dish to prepare as a light and healthy meal or a side dish.







Some ingredients used in this recipe are




Ingredients for the dressing


  • Thai red chili-1 chopped

  • Lemon juice- 1 tbsp

  • Fish sauce-1 tbsp

  • Organic jaggery powder/palm sugar- 1.5 tbsp


Method


Put all the ingredients in a bowl and mix it well.



Ingredients for the salad


  • Lettuce leaves- a handful

  • Pineapple-1/2 cup

  • Extra virgin olive oil-1 tbsp

  • Onion rings- a few

  • Roasted peanuts-1 tbsp

  • Pumpkin seeds-1 tsp

  • Mint leaves- a few



Method


Assemble the salad in a bowl,pour the dressing on top of the salad and give it a good toss.Garnish with walnuts.Serve cold.



Health/cooking tip


1.You could also add a variety of different fruits to this recipe such as kiwi or pomegranate or even add some grilled chicken for a variation.
