This dish is healthy, tasty ,quick and absolutely delicious. Its perfect as an appetizer , a light evening snack or as a school snack for your kids!

Ingredients
250 gm paneer
1/2 cup coconut milk
2tbsp fish sauce
2 tbsp lime juice
2 tbsp brown sugar
1 tsp garlic, minced
1 tsp Thai red curry paste
1/4 tsp turmeric powder
1/4 tsp cumin powder
1/4 tsp coriander powder
1/4 tsp curry powder
3 Basil leaves finely chopped
1 tsp Peanut butter
Salt & pepper to taste
Toothpicks- soaked in water
Vegetable oil, for brushing
Peanut sauce, fried basil,Thai chili and roasted peanuts for serving & garnishing
Direction
1.In a bowl combine coconut milk, Thai curry paste ,fish sauce (if using), lime juice, brown sugar, garlic, curry paste, turmeric, cumin & coriander powder,basil leaves, salt ,peanut butter &mix it until it’s a smooth paste .
2.In a large bowl, combine paneer cubes and the coconut milk mixture. Mix well to coat.
3.Thread 3-4 paneer cubes onto each skewer, leaving a small space between each cube.
4.Brush skewers with vegetable oil.
5.Heat a grill pan , add oil and grill the satay for 3-4 minutes per side or until done.
