Thai noodle soup with mushrooms and Holy basil


This delicous Thai noodle soup is a very wholesome,nutritious and utterly delicous dish. Its got the perfect blend of spice,tangy,sour and sweet. A must try for noodle lovers!







Some of the ingredients used in this recipe are







Ingredients for the pounded paste


Thai chili -1

Coriander stem- 2 tbsp

Garlic- 3



Ingredients for the soup


Thai red curry paste

Coconut milk- 300 ml

Fish sauce- 4 tbsp

Palm sugar/Jaggery powder/Brown sugar- 3 tsp

Lemongrass- 1 stem

Tamarind paste- 3 tbsp

Water- 1.5 cups

Basil leaves- 10-12

Kaffir lime leaves- 6-8

Shitake mushrooms/button mushrooms - 4-5

Baby corn- a few

Bok choy- 1-2

Carrots -1/4

Noodles-cooked -35 gm (approx or as per your choice)



Ingredients for garnishing


Fried onion- 2 tbsp

Sprouts- 2 tbsp

Spring onion greens- 2 tbsp



Directions


1.Using a mortar and pestle, pound Thai red chii, coriander stem and garlic and pound it well.


2.In a pan, add little oil and fry this paste, followed by coconut milk, water, fish sauce, tamarind paste, palm sugar, lemon grass, basil leaves, kaffir lime leaves and let it simmer for sometime. Once done, the veggies and let it cook until they are well cooked.


3.Add boiled noodles to this soup. Garnish with fried onion, sprouts and spring onion greens .
