This gorgeous Thai noodle soup is the perfect wholesome meal one can have on hectic weekday or on a lazy weekend. Its cozy, healthy, quick and delicious. Its got the perfect balance of sweet, spicy, salt and sour.
Ingredients
Thai yellow curry paste-1 tbspn
Garlic-2 cloves
Chopped galangal-1 tspn
Coriander roots -(a few)
Thai red chilli-1 small
Vegetable stock-1/2 cup.
Fresh basil leaves-4-5
Kaffir lime leaves- 2-3
Coconut milk-150 ml
Coconut oil-1 tablespoon
Bok choy-4-5
Carrots-a few round slices
Broccoli-a few florets
Shitake mushrooms slices-a few.
Chicken/prawns-(optional)-4-5 medium size prawns/a few pieces of boneless chicken.
Vegetable stock- 2 tablespoon
Raw brown sugar/palm sugar-1/2 tbsp
Whole wheat noodles(boiled and cooked as per instructions)- one cup.
Fish sauce-1.5 tbsp or as per taste.
Tamarind- 1 tbsp
Basil leaves- 8-10
Kaffir lime leaves-5-6
Method
1.In a mortar, pound the coriander stems,Thai chilli and garlic into a paste and keep aside.
2.In a sauce pan,add coconut oil ,cook the pounded paste for a minute followed by the yellow curry paste. Cook for a minute,add the stock and the coconut milk very slowly and give it a good stir.
2.Add the vegetables/chicken/prawns and let it simmer for a few minutes. Add the basil, kaffir lime leaves,galangal,raw sugar,fish sauce and tamarind.Let it cook for a few more minutes or until done.Add the boiled noodles.Serve warm.
Health/Cooking Tip
1.You can add different types of mushrooms/chicken/vegetables to this recipe for more flavours/variations.
2. If using mushrooms,peel off the top skin/layer of the mushroom and gently clean all the dirt from it by using a damp cloth/napkin and make sure its cleaned well.Avoid washing the mushrooms as it would absorb a lot of water like a sponge and that would change the flavour and texture of the dish.
4.Use whole wheat/any other good quality whole grain noodles for added health benefits instead of the ones made with refined flour.
5.Roughly tear the basil and kaffir lime leaves with your hands before using it as it releases lots of aroma which adds a lot of flavour to the food.
