This recipe is a family favourite and was taught to me by one of my favourite chef's Ms Nooror Somany Steppe who is also one of the best chef's in Thailand.Its got the perfect mix of all the delicious Thai spices and is incredibly easy to prepare.
Some of the ingredients used in this recipe are
Ingredients
Chicken mince-250 gm
Red Thai curry paste- 2 tbsp
Oil- 1.5 tbsp
Basil leaves- 10-12
Kaffir lime leaves- 6-8 (finely chopped)
Red Thai chili- 1
Fish sauce- 2 tbsp
Palm sugar/Raw brown sugar- 1 tbsp
Red capsicum (optional )-5-6 pieces cut in cubes
Directions
1.In a pan, add oil followed by the red curry paste and fry it for 2 min until an aroma develops. Add the minced chicken and stir fry it well for a few minutes.
2.Add the basil leaves ,kaffir lime leaves, Thai chili, fish sauce and the palm sugar and mix well.
3.Cook for for a few minutes until done. Serve hot along with steamed Jasmine rice.
