Stir fried vegetables in a Thai green curry sauce

This Thai style stir fried vegetables is a very quick,easy ,healthy and delicious recipe. It's got the perfect balance of sweet, sour ,spice and tangy and its tossed very gently is coconut milk and Thai herbs.






Some of the ingredients used in this recipe are





Ingredients


Oil- 1 tbsp

Green Thai curry paste -2 tbsp

Coconut milk -100 ml

Water-1 cup

Kaffir lime leaves -4-5

Thai red chilli -1

Palm sugar/Jaggery powder-2 tsp

Basil leaves - 10-12

Fish sauce-1 tbsp

Broccoli (blanched) 85gm

Capsicum- 50 gm

Baby corn -60 gm


Directions


1.In a pan add oil , Thai green curry paste and let it fry for a minute .


2.Add coconut milk ,kaffir lime leaves ,Thai red chilli ,fish sauce , palm sugar and mix it well.


3.Add the blanched vegetables and basil leaves and let it cook for 5-7 minutes or until done.

4.Serve hot with Jasmine rice.
