This recipe is the perfect start to your morning or perfect as a light lunch !Its delicious,healthy and very easy to prepare.
Some of the ingredients used in this recipe are
For the omelette
4 eggs, beaten
1 small onion chopped
1 small tomato chopped
2 green chillies chopped
2 tbsp finely chopped
Salt and black pepper
1 tsp of butter
For the curry
1 tsp garlic paste
½ tsp fresh ginger, finely chopped
¼ tsp fenugreek seeds
2 small tomatoes chopped
2 medium red onions, finely chopped
400ml coconut milk
2 sprigs curry leaves
1 tsp red chilli powder
1 tsp Sri Lankan or Madras curry powder
1/2 tsp turmeric powder
1 finger green chilli, slit
2 tbsp vegetable oil
Salt to taste
To garnish:coriander leaves, fried onions and cashews
Directions
Heat the butter in a nonstick pan. Add one onion and saute till light brown and soft. Whisk the rest of the omelette ingredients together & add to the onions. Swirl around for a few seconds until the eggs just begin to set, then carefully fold the egg into a half moon shape with a spatula and reduce the heat. Cook for two minutes on each side, then slide on to a plate.
In another pan heat oil ,add the cumin & fenugreek seeds,curry leaves,ginger,garlic & green chillies,tomatoes ,onions,and all the dry spices and cook for a few minutes. Add the coconut milk.Reduce the heat to a minimum and simmer for five minutes.
Gently slip the omelette into the curry and simmer for a couple of minutes. Garnish with fried cashews,fried onions & coriander leaves
