You guys, this soup!It’s so delicious.Its so darn good.It literally checks all the boxes –creamy, perfect texture,awesome flavour,super nutritious,doesn’t take ages to make.These are my favourite kind of recipes-quick,simple,fresh and awesome.
Some of the ingredients used in this recipe
Ingredients
Baby spinach leaves-200 gm (blanched)
Onion- 1 chopped
Garlic- 2 cloves chopped
Walnuts-5
Vegetable stock-1.5 cups
Whole Milk – ¼ cup whole milk
Salt and pepper- As per taste.
Cream- 1 tbsp for garnish
Sesame seeds/sunflower seeds/pumpkin seeds- 1/2 tbsp
Microgreens- for garnishing
Method
1.In a sauce pan add olive oil,onion and garlic followed by blanched spinach,walnuts.Add vegetable stock,salt,pepper and cook for a few minutes.Gently add the milk and stir occasionally.
2. Once done blend the soup with a hand blender until smooth and strain it using a seive .
3.Garnish with sesame seeds, walnuts,microgreens and fresh cream. Serve warm.
