This delicious and healthy spinach pesto pasta is a must try ! It protein packed bursting with flavour and is very easy to prepare. I have used the Donna Pastaia spinach pasta which a very healthy and nutritious and I highly recommend it if you wish to have a healthier option.
Some of the ingredients used in this recipe are
Ingredients for the pesto sauce
2 cups fresh basil leaves, packed
1/2 cup grated Parmesan cheese
1/2 cup pine nuts or walnuts
3 garlic cloves, minced
1/2 cup extra-virgin olive oil
Salt and pepper to taste
Ingredients for the pasta
Hummus- 1 cup
Pesto sauce- 2 tbsp
Pasta (Donna Pastaia spinach pasta)
Fresh basil leaves
Reserved pasta water
Salt and pepper- to taste
Roasted almonds- 8-10 chopped
Parmesan cheese (optional) as per taste .
Instructions
To prepare the pesto, trasnfer all the ingredients in a blender and blend it roughly until in a coarse paste. (Make sure to blend it slowly so that it doesn’t become a smooth paste).
Cook the pasta as per the packet instructions until al dente. Once done transfer this is a sauce pan, Add fresh basil leaves, reserved pasta water, hummus pesto paste, salt and pepper and toss it well.
Transfer this is a serving plate, add parmesan cheese ,chopped roasted almonds and serve hot.
