Spaghetti with cherry tomatoes & fresh basil

One of my favourite minimal ingredient recipes that always makes me feel so comforted.Its really just about the little things,isnt it?This tasty, simple and quick recipe is so good and take less than 30 minutes to prepare.Its one of those recipes which is perfect to prepare when you feel like eating something really nice but don't feel like spending too much time in the kitchen.In simple words,its easy,quick,healthy and delicious.






Some of the ingredients used in this recipe are




Ingredients


Spaghetti- 50 gm (whole wheat)

Tomatoes – 4 medium size

Onion-1 small finely chopped

Carrots- 1 tbsp finely chopped

Garlic- 3 finely chopped

Celery- 1 tbsp

Salt and pepper to taste

Oil- 1 tbsp

Basil leaves- 10-12 leaves

Chilli flakes- as per taste

Cherry tomatoes- a few.

Method


1.In a saucepan add lots of water and let it boil.Add 6-8 tomatoes and let it simmer for 8-10 minutes or until the the skin is very soft.Strain the tomatoes using a sieve and keep them aside until they have cooled down.Peel the skin off and blend them in a blender until smooth.Strain this puree using a sieve and keeping it aside.


2.In another saucepan add oil,onion and garlic.Cook for a minute until slightly brown.Add the carrots and celery and cook for a few more minutes.


2.Add the tomato puree,salt and pepper and cook it for 5-10 minutes on low heat.Add some fresh basil leaves.Your tomato pasta sauce is now ready.Keep aside.


3.Boil the spaghetti as per the packet instructions and strain well or if making home made paste then the recipe is mentioned bellow.


4.Add the boiled spaghetti to the tomato pasta sauce and give it a good toss.Add fresh basil, chilli flakes and parmesan shavings.Serve hot.



Method to prepare fresh pasta


Whole wheat flour- 100 gm

Egg-1

Salt and pepper to taste

Olive oil-1 tbsp


1.Knead the flour, egg and oil and make a pasta dough.Allow it to rest for 30 min.


2.Roll the dough in thin sheets approximately (6’’ length and 4’’ width)


3.Cut the pasta into very thin strips (lengthwise).


4.Once done boil the pasta until al dente for approximately 8 min and strain well.



Healthy tip/Cooking tip

1.You can add different types of mushrooms/sun dried tomatoes/chicken to this recipe for more flavour/variations.


2.If using mushrooms, peel off the top skin/layer of the mushroom and gently clean all the dirt from it by using a damp cloth/napkin and make sure its cleaned properly.Avoid washing the mushrooms as it would absorb a lot of water like a sponge and that would change the flavour and texture of the dish.


3. Cook the pasta 1-2 min less than the packet instructions for the perfect texture.


4.Use whole wheat/any other good quality whole grain pasta/homemade pasta for added health benefits instead of the ones made with refined flour.


5.You can also use different varieties of whole wheat pasta such as fettucini ,linguine etc instead of spaghetti .
