This delicious South Indian Lemon Tadka rice is a quick, healthy and easy option especially to make a wholesome meal with leftover Basmati rice which can be had for lunch or dinner. There are many variations of this recipe, however this one happens to be my favourite.
Some of the ingredients used in this recipe are
Ingredients
Cooked basmati rice - 1 portion
Lemon juice - 1/2 lemon or as per taste.
Oil- 2 tbsp
Cashew nuts (roasted /peanuts)-10-15
Mustard seeds- 1 tsp
Ginger julienne - 1 tbsp
Urad dal -1 tsp
Hing/ Asafoetida- 1/4 tsp
Curry leaves - 10-15 and some more fried curry leaves to garnish
Turmeric powder- 1/2 tsp
Dried Red chillies -3-4
Salt -to taste
Directions
1.In a pan , add oil ,fry cashew nuts/peanuts until slightly brown and keep them aside.
2.In the same pan, add oil, add mustard seeds, ginger, urad dashing, dried red chillies, salt, turmeric and curry leaves and let it cook for 2 minutes. Add lemon juice, fried cashews/peanuts. Reduce the flame to low heat. Add the cooked basmati rice, garnish with some fried curry leaves and serve this delicious rice on banana leaves and enjoy.
Note- The above are approximate quantitites. Adjust the taste as per your liking.
