I simply love cooking on hot sunny days for my friends and family.But what I love the most is cooking fresh,fast and simple recipes just like this one.This is such a mouth watering,nutritious,quick and easy recipe which can be prepared in 15 minutes.
Some of the ingredients used in this recipe are
Ingredients
Fish fillet-1 medium size (preferably with skin)
Roasted sesame seeds-1 tbsp
Lemon zest-1 lemon
Salt and crushed black peppercorn powder- to taste
Lemon juice-1 tbspn
Bok choy- 50 gm
Chinese cabbage-50 gm
Onion-1tsp finely chopped
Garlic-1tsp finely chopped
Olive oil-1 tbsp
Method
1.Marinate the fish with lemon juice,lemon zest,sesame seeds,olive oil,salt and pepper.Keep aside for 15 min.
2.Pre heat the oven at 180C for ten min.Bake the fish until done/pan fry it well in little olive oil on each side until done.
3.In a wok,add 1 tbspn olive oil,fry garlic,onion,salt and pepper and add the leafy vegetables and fry it for a few minutes.
4.Once done,place the stir fried vegetables on a plate topped with the crusted fish. Serve hot.
Health/Cooking Tips
1.You can use cottage cheese/tofu as vegetarian options.
2.Always bake the fish in a preheated oven of at least 10 min and grease it with little butter/olive oil to keep it moist.
3.Use a good quality coconut/olive or unprocessed oil and avoid refined oils while cooking.
4.Never overcook any leafy/crunchy vegetables as it may loose its texture/color and flavour. Either blanch the crunchy vegetables or cook the leafy vegetables for just a minute to retain its color and crunch.
