This flavourful , protein packed and healthy dish is extremely easy to prepare. It is marinated in a handful of spices,roasted to perfection and garnished with a perfectly balanced tahini sauce, nuts and herbs.
Some of the ingredienst used in this recipe are
Ingredients for the marinade of the sweet potatoes
Sweet potatoes -300 gm
Olive oil -1.5 tbsp
Smoked paprika -1.5 tsp
Salt +pepper -To taste
Cumin powder -1/2 tsp
Directions
1.In a bowl marinade the above ingredients and keep it aside.
2.Pre heat the oven to 180C for ten minutes. Now ,transfer the sweet potatoes in a baking tray and roast these potatoes for 45-50 minutes or until done.
Ingredients for the dressing
Yogurt-1 cup
Tahini paste -4 tsp
Lemon juice -1.5 tsp
Garlic-2 cloves finely chopped
Salt-to taste
Water - 1 tbsp
Directions
In a bowl add the above ingredients and keep it aside.
Ingredients for the the toppings and garnish
1.Olive oil -1 tbsp
2.Garlic-2 finely chopped
3.Red and yellow capsicum- 1 tbsp each
4.Onions - 2 tbsp
5.Roasted sesame seeds -1 tsp
6.Salt-to taste
7.Walnuts -to garnish
8.Coriander leaves -to garnish
Directions
1.In a pan ,add olive oil, fry the onion,garlic ,peppers and roastedsesame seeds for a few minutes until they are cooked and keep it aside .
2.In a plate ,add the yogurt tahini dressing , place the sweetpotatoes and garnish with some more dressing, cooked peppers ,walnuts and coriander leaves.
