Roasted pumpkin & whipped feta dip


This pumpkin whipped feta paired with honey, walnuts, and fresh thyme. The recipe can be made ahead of time, with an option to serve with crackers . It’s a delicious and easy-to-make appetizer that your guests will love!

Ingredients


Feta- 50 gm

Yogurt- 5 tbsp

Roasted pumpkin puree- 65 gm

Raw honey- 1 tsp

Dried thyme- as pet taste

Black pepper powder -pinch

Walnuts- for garnishing

Directions


1.Pre heat the oven to 180C. Dice the pumpkin into small cubes and coat it generously with olive oil and place it on a baking tray with butter paper . Roast the pumpkin in the oven for 30-35 minutes or until it well roasted. Once done, let it cool for sometime until it comes to room temperature.


2.In a blender add yogurt, feta , roasted pumpkin puree, honey, thyme, black pepper and blend it until it’s a smooth puree. Once done, keep it in the fridge and chill for 1 hour. This step is important. Once it’s chilled, garnish with walnuts, dried thyme and a drizzle of honey on it.
