This wholesome recipe is healthy, easy to prepare and absolutely delicious.

Ingredients
4 large red bell peppers
1 tablespoon olive oil
½ medium onion, diced
1 tsp garlic
1 teaspoon salt and pepper
1 cup uncooked white rice
11/2 cup stock
1 diced tomatoes
3-4 green onions, chopped
2 tablespoons chilli flakes and a little tabasco (optional)
1 cup kidney beans cooked
1/2 cup corn
2tbsp Spring onion greens
1 tsp jalapeños chopped
1 cup shredded mozzarella
2 tbsp fresh coriander /cilantro leaves
Instructions
1.Preheat the oven to 200 C .
2.Trim and deseed the bell peppers.
3.Heat the oil in a large skillet over medium heat. Once the oil hot ,add the onion, garlic and cook, stirring, until just softened. Stir in the rice and salt and cook for a few minutes.
4.Stir in the stock, tomatoes, green onions, chili flakes, tabasco and corn. Bring the rice mixture to a boil. Reduce the heat, cover, and simmer until the rice is tender and cooked.
5.Stir in black beans and gently stir it well.
6.Arrange the peppers in the prepared baking dish and fill them with the rice mixture, dividing evenly. Top with cheese. Bake, uncovered, until cheese is bubbling and golden brown, about 40 minutes.
Sprinkle with cilantro and serve hot.
