Roast chicken with grilled vegetables

This garlic scented roast chicken is a very close version of the classic roast chicken.

Its quick,easy,healthy and can be prepared in vert little time.Its perfect for a week

night dinner and yes,its fancy enough to serve guests.






Some of the ingredients in this recipe





Ingredients


Asparagus- 100 gm

Bell peppers- 50 gm (red,green,yellow)

Zucchini- a few cut slices

Broccoli- a few florets

Garlic- 3 cloves finely chopped

Butter- 1 tablespoon

Salt and ground black pepper- as per taste

Thyme- a few sprigs (preferably fresh)

Chicken legs- 2 (with skin)

Olive oil- 1 tablespoon


Method


1.Marinate the chicken legs with garlic, thyme, salt and pepper.


2.Pre heat the pven to180 degrees C.


3.In a pan,add olive oil,½ tablespoon butter.Add the marinated chicken legs and pan fry it until golden brown on each side or until 3/4 done.Transfer this chicken into the pre heated oven and let it roast for 15 min.(Do baste it with ½ tablespoon of butter after 7 min of roasting and turn sides)


4.Marinate the chopped vegetables with thyme,salt,pepper and olive oil.Pan fry them for 5 minutes or until done.


5.Once the chicken is done, place it on a plate and serve it with grilled vegetables.Serve hot.



Health/Cooking Tips

1.Once the chicken is half roasted,remove it from the oven and quickly grease it with little butter on both the sides and put it back in the hot oven.This prevents the meat from drying up and getting hard.

2. o prepare a basil infused olive oil, take some basil leaves and olive oil and blend it in a mixie until smooth.

3.You can use couscous instead of brown rice as an option.


4.Blanch the vegetables before frying and toss it in a pan with little olive oil just for a minute.This will help retain its crunchiness and colour.
