Red Thai curry with pineapple

Red Thai curry with fresh pineapple.This amazing recipe is pretty much a one pot meal,very quick and easy to prepare and is a big hit amongst people every single time I prepare it.







Some of the ingredients used in this recipe are






Ingredients


1.Olive oil-1 tbsp

2.Red Thai curry paste-1 tbsp

3.Coconut milk-1 cup

4.Boneless chicken cubes-150 gm

5.Fish sauce-1.5 tbsp

6.Palm sugar/raw brown sugar-1 tbsp

7.Kaffir lime leaves-6-8 finely chopped

8.Basil leaves- 8-10

9.Fresh pineapple- 1/2 cup



Method


1.In a pan add oil,red curry paste and fry it for 2 minutes until an aroma develops.


2.Add the coconut milk, chicken, fish sauce, kaffir lime leaves, basil leaves, palm sugar and let it simmer gently for 10 minutes or until the chicken is cooked.


3.Lastly add the fresh pineapple and give it a good stir. Serve warm.
