Idli’s are savoury steamed rice cakes consisting of fermented lentils and rice originating from South India . It’s a very popular dish usually made for breakfast in most South Indian households. Traditionally a Idli recipe is made with urad dal and idli rice. Ragi idli is just a healthy variation of these idlis where rice is replaced with ragi (finger millet). It’s a healthy,delicious recipe and is a must try!
Some of the ingredients used in this recipe are
Ingredients
Idli Rava-250 gm +350 ml water
Urad Dal- 125 gm +150ml water
Ragi flour- 40 gm
Water -1/2 cup for grinding it.
Soda - a pinch
Salt to taste
Directions
1.Soak urad dal overnight.
2.Soak idli rava for an hour.
3.Strain both , and add them to a mixer grinder. Add 1/2 cup of water and blend it well until it’s a smooth batter. Transfer this into a big bowl.
4.Add ragi flour , soda and salt and mix it well.
5.Let this mixture ferment overnight.
6.In the meantime grease the idli moulds with little oil. Once done, transfer this batter gently into idli moulds and steam it for 6 minutes .
7.Once done, gently remove it from the moulds. In a pan add oil, give a tadka of rai (mustard seeds), kadi patta (curry leaves) and white sesame seeds. Put the gas on low flame and transfer the idlis to this pan. Gently give it a stir until the idlis are well tempered and mixed . Serve hot with coconut chutney and sambar.
