These prawn and avocado tacos are pretty amazing and take you to a tropical place even if its a gloomy afternoon.Especially with the creamy avocado spread stuffed into a warmed tortilla.Oh, and did I mention they take maybe thirty minutes to throw it together.So really there is NO excuse not to make these awesome babies.
Some of the ingredients used in this recipe
Ingredients
Shrimps- 7-8 medium size (devined,deshelled and without tail)
Avocado -1/2 (slightly mashed)
Iceberg lettuce- 3-4 tablespoon shredded
Chili flakes-as per taste
Garlic-3 cloves (finely chopped)
Salt-as per taste
Lemon juice -1 tablespoon
Coriander leaves for garnishing
Onion-1/2 finely chopped
Jalapeno-1-2 as per taste
Mayonaise-1 tbsp
Sour cream-2 tbsp
Cumin powder- 1/2 tsp
Ingredients for homemade corn tortilla
Corn meal flour/Maize flour or a combination of Maize and whole wheat flour- 200 gm
Salt- as per taste
Olive oil- 2 tablespoons
Parsley-1 tablespoon finely chopped
Water- 80ml-100 ml approx.
Method
1.In a bowl add the corn meal flour,salt,olive oil,chopped parsley and water.Knead it into a soft dough and allow it to rest for 10 minutes.
2.In a pan,add olive oil & garlic and fry the prawns for a few minutes on each side or until done. Add chilli flakes, cumin powder, lemon juice ,chili flakes and salt and give it a good stir.
4.Now roll out the dough into small size round flat breads /small rotis.
5.Cook them on a hot plate turning each side occasionally and allow them to cool.
6.Once done ,top the corn tortillas with mayonnaise,sour cream, mashed avocado, shredded iceberg, shrimps, onion rings, jalapenos,coriander leaves and lemon juice .Fold into half and serve hot.
Health/Cooking Tip
1. You can make corn tortillas at home very easily and quickly instead of buying the store bought ones.
2.You can freeze the corn tortillas for future use.
3.You can use sweet potatoes/cottage cheese/corn/peppers as a vegetarian option instead of the prawns.
