Healthy polenta muffins

These beautiful round healthy babies are a perfect morning/evening snack and are a delight to eat without feeling guilty.They are extremely easy and quick to prepare and are a a big hit at any occasions/parties.






Ingredients


Whole wheat flour-60 gm

Raw organic jaggery powder- 50 gm

Butter-50 gm

Egg-1

Baking powder-5 gm

Pure vanilla extract-1 ml

Polenta-10 gm


Method


1.In a bowl add all the ingredients and mix well until it becomes a smooth batter and transfer it into a well greased muffin moulds until 3/4 full and dust the polenta on top of the batter.


2.Pre heat the oven at 180 C for 10 minutes.Put the cake mould in the oven and let the muffins bake for approximately 25 minutes or until done. Once done,serve warm.



Health/Cooking Tips

1.Use organic whole wheat flour/almond flour instead of refined flour for health benefits

2.Use a an organic vanilla extract instead of the commercial vanilla essence which contain preservatives and artificial colours.

3.Use raw organic jaggery powder instead of refined white sugar
