This is a lovely comforting ,quick and healthy recipe which you can prepare in no time. Its got a really nice and subtle flavour and the perfect balance of sweet, salty and spicy.

Ingredients
Fish -3 fillets
Salt - to taste
Olive Oil- 1 tbsp+1 Tbsp to marinade
Garlic - 2-3 cloves
Ginger- 1 inch
Thai chili -1
Coconut mlk - 1 cup
Fish sauce- 1tbsp
Palm sugar /Raw brown sugar- 1 tsp or to taste.
Bok choy/carrots/broclli or any vegetables of your choice.
Parsley/ coriander/lemon and spring onion - to garnish
Directions
1,.Marinade the fish in olive oil and salt , mix well and keep it aside.
2.In a pan ,add oil fry garlic, ginger,Thai chili, onions, coconut milk ,vegetables of your choice (carrots, bok choy, brocolli,capsium) ,add fish sauce ,palm sugar, fish and let it cook it until its done. Add some spring onion greens, and garnish it with lemon wedges, chilli ,parsley and serve hot with steamed /Jasmine rice.
