Pistachio Chicken Skewers


These pistachio chicken skewers are not only delicious but are very easy to prepare,but are very healthy and take less than 30 minutes to prepare. So the next time you have guests over, you kow what to prepare !






Some of the ingredients used in this recipe are







Ingredients


Chicken - cut in medium long strips (supreme cut) -2 large boneless breast

Arrowroot flour / cornflour -1 tbsp

2 eggs beaten

1 cup Pistachios - roasted and gently crushed

Parmesan cheese - as per taste

Olive oil  for shallow frying

Salt & pepper

Dried basil ( or herbs of your choice)optional

Garlic -4-5 cloves minced

Chili flakes optional

Breadcrumbs for frying


For garnish


Rocket leaves

Parmesan shavings

Lemon wedges

Parsley


Directions


1.Marinade the chicken in all the ingredients mentioned above and keep it aside for 15 min . Insert toothpicks into the chicken and make it into skewers . Dip it in bread crumbs, make sure they are evenly coated and keep them aside .


2.In a pan add olive oil and gently fry the chicken until it’s cooked .


3.In a plate add salad leaves , add the chicken skewers , and garnish it with lemon wedges , parsley , Parmesan shavings and serve hot .
