Ingredients for the pesto sauce
Basil -100 gm
Walnuts-8 /1/2 cup pine nuts
Parmesan cheese -1 tbsp
Garlic -1 tsp
Extra virgin olive oil- 1/2 cup
Salt & pepper -to taste

Boneless chicken breast -120gm
Garlic -2
Salt and pepper - to taste
Extra virgin olive oil-2 tbsp
Pesto sauce -3tbsp
Directions
1.For the pesto sauce ,put all theingredients in a blender and blend itonly for a few seconds until it looks likea coarse mixture.
2.Marinade the chicken in salt pepperand garlic. In a pan, add oil and fry thechicken on both the sides until it’scooked well.
3.Once done, transfer it to anotherplate and pour some pesto sauce ontop of it and make sure the chicken is well coated with the sauce.
Ingredients for the mashed potatoes
Potatoes -4
Milk -1/2 cup
Butter-3 tsp
Salt & pepper - to taste
Cream- 1 tsp
Directions to cook the mashed potatoes
1.In a saucepan, add water and bring itto a boil. Add the potatoes and let it boil for 15 minutes on high flame oruntil very soft. Alternatively pressurecook the potatoes and give it 8-10 whistles.
2.Once they are ready ,let them cool.Peel the skin and keep them in a bowl.Using a potato masher ,mash themgently until they have been properlymashed.
3.Using the whisk attachment on yourhand /stand mixer ,start off slowly and mash the potatoes and then gently move to a medium speed.Gently addthe hot milk and continue whisking ituntil you reach the desired texture .
4.Slowly add the softened butter andcontinue whisking.Finally add somesalt & pepper.The mashed potatoeswill now be whipped,velvety and fluffyand ready to eat.
5.In a plate , aseemble the mashed potatoes, place the warm pesto chicken on top of it. Garnish with cherry tomatoes, olive oil, basil leaves and a little drizzle of pesto sauce.
