This is a a delicous, quick and easy dish which can easily be prepared on a weekday or a special occassion. You could serve this creamy grilled chicken with your delcious pasta, rice or breads.

Ingredients for the grilled chicken
4 boneless, skinless chicken breasts
Salt and pepper, to taste
Olive oil, for brushing
Ingredients for the creamy mushroom and spinach sauce
2 tablespoons butter
1 tablespoon olive oil
8 ounces mushrooms, sliced
2 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
2 cups fresh spinach leaves
Salt and pepper, to taste
Grated Parmesan cheese (optional, for garnish)
Chopped fresh parsley (optional, for garnish)
White wine (optional)- 1-2 tbsp
Directions
1.Season the chicken breasts with salt and pepper on both sides.
2.Brush the chicken breasts with olive oil to prevent sticking.
3.Grill the chicken breasts in a grill pan for about 6-8 minutes per side, or until they are cooked through and have nice grill marks.
4.In a large skillet, heat the butter and olive oil over medium heat.
5.Add gralic,sliced mushrooms to the skillet and cook until they are golden brown and tender, stirring occasionally, for about 5-7 minutes
6.Pour in the chicken broth and heavy cream, stirring to combine. Allow the sauce to simmer for a few minutes until it starts to thicken slightly.
7.Stir in the fresh spinach leaves and let them wilt in the sauce. Season with salt and pepper to taste.
8.Place the grilled chicken breasts on serving plates and spoon the creamy mushroom and spinach sauce over the top.(reserve some sauce for the pasta)
9.Garnish with grated Parmesan cheese and chopped fresh parsley, if desired.
10.In a pot, boil water , and cook the pasta until it’s al dente. Once done transfer it in in a pan, add the creamy mushroom and spinach sauce a lot with a little pasta water and coat it well.
11.Serve the grilled chicken with creamy mushroom and spinach sauce hot, alongside this delicious pasta and enjoy.
