Parmesan crusted chicken with a fresh green salad

Some of the ingredients used in this recipe



Ingredients


Chicken breast- 1

Freshly grated Parmesan cheese-2-3 tablespoons

Bread crumbs- (preferably whole wheat)- 2 tablespoons

Dijon mustard-1 tablespoon

Salt and ground black pepper- as per taste.

Mixed salad leaves- roughly torn

Fresh onion rings- a few (optional)

Olives-a few

Jalapeno chillies-1 (sliced) or chilli flakes as per taste

Gherkins-a few slices (optional)

Lemon wedges- 2

Orange slices- a few.


Method


1.Marinate the chicken breast with dijon mustard,salt,pepper,parmesan cheese and bread crumbs.


2.In a pan add little olive oil and fry the chicken breast from both sides until golden brown.

Transfer this chicken onto a chopping board/flat plate and cut it into strips and keep aside.


3.In a salad bowl place all the salad leaves,olives, jalapeno chilies, gherkins,fresh onion rings ,freshly squeezed lemon juice, salt and pepper.  Toss it well.


4.Transfer the salad on a fresh plate and place the paramasen crusted chicken on top. Serve with lemon wedges and orange slices.


Health /Cooking tips


1.Pan fry/bake the chicken in lil olive oil instead of refined cooking oil.


2.Always use fresh parmesan cheese and not the store bought bottled ones.
