Paneer Kathi Rolls


Paneer Kathi Rolls are a popular Indian street food, made with spiced paneer (Indian cottage cheese) wrapped in a paratha or roti with vegetables and chutney. This recipe is not only delicious but also very healty and easy to prepare.

Ingredients


For the Paneer Filling


  • 250 grams paneer, cut into strips

  • 2 tablespoons oil

  • 1 large onion, sliced

  • 1 large bell pepper, sliced

  • 1 teaspoon ginger-garlic paste

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon garam masala

  • 1/2 teaspoon red chili powder

  • 2 tablespoons tomato ketchup

  • 2 tablespoons yogurt

  • Salt to taste

  • Fresh cilantro/coriander (chopped)

  • 1 green chilli chopped

  • 4 parathas or rotis (I have used home made rotis made of Ragi)

  • 1/2 cup green chutney (mint-coriander chutney)

  • 1 small onion, thinly sliced

  • 1/2 teaspoon chaat masala

  • Lemon wedges

  • lettuce (optional)



Instructions


Preparing the Paneer Filling


  1. In a large pan, heat the oil over medium heat. Add the sliced onions and bell pepper. Sauté until the onions are translucent and the bell peppers are slightly soft.


  2. Cook for another 1-2 minutes until an aroma develops.


  3. Add cumin powder, coriander powder, turmeric powder, garam masala, and red chili powder. Cook the spices for 1-2 minutes until they release their aroma.


  4. Add the paneer cubes and gently stir to coat them with the spices. Cook for about 2-3 minutes.


  5. Stir in the tomato ketchup and yogurt, and cook for another 2-3 minutes until the paneer is well coated and heated through. Adjust salt to taste.


  6. Stir in the chopped cilantro and remove from heat.



Assembling the Kathi Rolls


  1.  Prepare your rotis/parathas


  2.  Spread a thin layer of green chutney on each paratha or roti


  3. Place a portion of the paneer filling in the center of each paratha or roti.


  4. Top the paneer filling with some thinly sliced onions and sprinkle a little chaat masala on top.


  5. Fold the sides of the paratha or roti over the filling and roll it up tightly. Secure with a toothpick if needed.


  6. Serve the paneer kathi rolls hot with lemon wedges on the side.
