This light ,fluffy and delicious pancake soufflé is one of the best you will ever eat. Its a pefect breakfast for a weekend or a kids party!
Some of the ingredients used in this recipe are
Ingredients
4 Large egg yolks
20 g Honey (1 tbsp)
25 gm granulated sugar /caster sugar
Pinch of salt
100 ml whole milk
70 gm all-purpose flour
4 Large egg whites
1/4 cup granulated sugar/caster sugar ,
Vanilla extract- 1 tsp
Directions
1.Preheat the oven to 150C/300F. Prepare a 9 or inch cast iron skillet
2.Combine the egg yolks, honey, sugar (I), and salt in a medium sized mixing bowl and whisk to combine with an electric hand mixer.
3.Add the milk and whisk until smooth
4.Sift in the flour and whisk until just combined
5.In the bowl add and whisk the egg whites until it reaches soft peak. Add the sugar (II) and continue to whisk until it reaches stiff peaks
6.Add ⅓rd of the meringue (egg white mixture) ,into the egg yolk mixture and whisk until smooth and well combined
7.Add the egg yolk mixture to the remaining meringue and gently fold it all together with a rubber spatula.
8.Pour the batter into the cast iron skillet and bake for approximately 45 min or until the pancakes have risen and are golden brown. (This could take a few more minutes depending on your oven).
9.Remove from the oven, top with a slab of butter, dust with icing sugar, berries, ice cream or any other toppings of your choice. Serve hot.
