Pan seared fish with coriander rice

Some of the ingredients used in this dish






Ingredients


Fish fillet- one medium size fillet or 2 small fillets

Coriander roots-1 tbsp finely chopped

Onion (finely chopped)-1.5 tbsp

Garlic -finely chopped-2 cloves

Yellow chilli powder-1 teaspoon

Salt and fresh black to taste

Turmeric powder-1 teaspoon

Lemon juice-1 teaspoon

Clarified butter(ghee)- one tbsp

Olive oil-1 tblsp



Ingredients for the coriander rice


Soaked basmati rice- 50 gm

Fresh coriander puree- 2 tablespoon

Coriander seeds-1/2 teaspoon

Cumin seeds-1/2 teaspoon

Coriander leaves- finely chopped (one tablespoon)

Salt to taste

Star anise- 1


Method


1.Marinade the fish with turmeric powder,yellow chilli powder,chopped corriander roots,onion juice,garlic juice and lemon juice.


2.In a big saucepan add clarified butter,star anise,coriander seeds,cumin seeds and fry it. Add the coriander puree and salt and cook it on a slow flame for 5 minutes.


3.Add the soaked rice,cover it with a lid and place on a hot plate for 25 minutes.


4.Once the rice is cooked,garnish it with clarified butter and chopped coriander.


5. In a pan add olive oil and pan fry the fish putting skin side down and cook on each side until done.


6.In a plate add the coriander rice topped with the delicious pan seared fish. Garnish with fresh coriander leaves. Serve hot.



Health/Cooking Tips


1.You can use chicken/Cottage cheese /Tofu for this recipe instead of fish for a variation
