Pan fried fish with poppy seeds and coconut scented rice

This dish a perfect mix of colors, textures and flavours.You can prepare this healthy and protein packed easy recipe for a quick and flavourful weeknight dinner.What’s more, it’s ready in no time, and makes for some amazing leftovers.







Some of the ingredients used in this recipe





Ingredients


Sea bass-(fillet-1 pc medium size)

Roasted poppy seeds- 2 tbsp

Olive oil- 2 tbsp

Thyme-2 sprigs

Salt and pepper to taste

Lemon juice- 1 tbsp


For the rice


Coconut milk- 85 ml

Water- 90 ml

Rice- 75 gm soaked

Coconut sugar/raw brown sugar- a pinch

Salt to taste


Method


1.Marinade the fish with salt, pepper, lemon juice and little olive oil and keep it aside for 15 min.


2.Take the marinated fish coat it well with roasted poppy seeds and pan fry it using little olive oil.


3.Cook the rice by adding all above mentioned ingredients.


4.Once done, serve the fish along with the coconut rice. Drizzle little olive oil and garnish with cherry tomatoes and basil. Serve warm.



Health /Cooking Tip.


1.Always fry the fish with the skin side down first.This make the fish nice and crispy


2.You can use quinoa /couscous as as options in place of rice
