Orange Pound Cake


This is a refreshing ,healthy, easy and delicious orange pound cake is made with oatmeal and whole wheat flour, is perfect as a tea time snack, or if you are craving something sweet !






Some of the ingredients used in this recipe are






Ingredients


Butter -230 gm

Raw Brown sugar/jaggery powder  200 gm

Eggs 3

Orange zest of 3 oranges

Baking powder 1 tsp

Salt a pinch

Milk 120 ml

Whole wheat flour 140 gm

Oatmeal flour 140 gm


Orange syrup


Orange juice 3 tbsp

Brown sugar 70gm


Orange drizzle -(optional)-avoid it for a healthier option.


Icing sugar -3 tbsp

Orange juice -2-3 tsp



Directions


  • Pre-heat the oven to180 and line a grease a baking tin with baking paper.


  • In a bowl, add sugar ,orange juice and mix it well & keep it aside.


  • In a bowl add butter,sugar & orange zest. Mix it well . Add eggs one at a time and vanila extract .


  • In another bowl add both the flours ,baking powder and salt .


  • Now add the dry ingredients,orange juice mixture and the butter and sugar mixture and mix it all together using a hand mixer


  • Transfer the cake batter into the prepared baking tin,smooth out the top, and bake in the pre-heated oven at (180 ºC) for 35-40 minutes or until risen, golden brown on top and an inserted toothpick comes out clean.


  • Allow to cool in the loaf tin for about 15 minutes, then remove from the tin, and allow to cool completely on a cooling rack.



For orange drizzle


  • Stir the powdered sugar and orange juice together until you get a thick even mixture, mixing well, until you get the correct icing consistency..You can add more juice to make it runnier, or more powdered sugar to make it thicker, as required.


  • Drizzle the icing over the cooled cake and enjoy.
