Mango panna or Aam panna is a delicious and refreshing drink which is made from raw mangoes and is known for its cooling properties . It is usually had in the summer to beat the Indian summer heat.
Some of the ingredients used in this recipe are
Ingredients
Raw mango- 3 nos (medium size)
Water -6 cups
Salt to taste
Black salt -2 tsp
Black peppercorn -(crushed)-2tsp
Rosted cumin powder-2 tsp
Soaked fennel/Saunf -2 tsp
Cardamom powder-1 tsp (optional)
Raw brown sugar -3/4 cup
Mint leaves -3/4 cup
Ice cubes -to serve
Directions
1.In a saucepan , add water and let it come to a boil. Add sliced raw mangoes and boil for 15-20 minutes or until they are completely soft and mushy.Alternatively ,you can pressure cook it for 3-4 whistles.
2.Using a strainer , strain these mangoes. Once cooled , scoop out the pulp and put it in a blender along with mint leaves and some water and blend it well. Transfer this is a bowl and keep it aside.
3. Add brown sugar, soaked fennel seed/saunf, rosted cumin powder , salt, black pepper powder,black salt and blend it once again in a blender until all the ingredients are well blended. The mango panna concentrate is now ready.
4.To serve ,take a tall glass, add 2-3 tbsp of mango wanna concentrate,add some chilled water and ice cubes.
5.Garnish with lemon wedges,mint leaves and serve chilled.
