This four ingredient mango, coconut & chia seed pudding is a delicious and healthy pudding made with coconut milk, chia seeds and mango. It’s perfect for breakfast ,snack or dessert and is loaded with protein ,fibre and healthy fats .

Ingredients
1.Coconut milk - 1 cup
2.Chia seeds -3 tbsp
3.Organic raw honey- 1 tbsp
4.Mango -1 cup (chopped) teaspoon
Directions
1.In bowl add coconut milk, chia seeds ,honey and give it a good mix . Cover it with a cling film and keep it in the fridge for 4 hours.
2.Remove it from the fridge , stir it well and make sure there aren’t any lumps . Cover it once again with a cling film and put it back in the fridge and let it rest for another 4 hours. Letting this rest in the fridge makes the texture of this pudding extremely creamy and rich.
3.Once done remove it from the fridge and stir it once again.
4.In a blender add the mango with a dash of water and blend it until it its a smooth and thick purée.
5.In serving cup add the chia seed pudding and top it up with mango purée. Serve cold.
