This Kerela style fish wrapped in banana leaves is incredibly delicous ,succulent and wholesome dish. The fish is marinated with aromatic Indian spices, wrapped in banana leaves and cooked to perfection.
Some of the ingredients used in this recipe are
Ingredients for the masala
Coconut oil- 2-3 tbsp
Methi dana/Fenugreek seeds- 3-4 (use little or else the dish with become bitter)
Badi Saunf/ large fennel -1
Ginger chopped-1 tbsp
Garlic- 1.5 tbsp
Onion-1
Kadi patta-8-10
Tomato-1 chopped
Coconut powder- 2 tsp or fresh coconut (as per taste)
Coriander leaves - to garnish
Dry spices
Turmeric powder/Hald-1/2 tsp
Kashmiri chili powder 2 tsp
Coriander powder- 1.5 tsp
Jeera powder/cumin powder- 1/2 tsp
Hing/Asafoetida- 1/4 tsp
Marinade for the fish
Fish fillets - 3- 4
Salt to taste
Lemon juice- 1/2
Turmeric powder- 1/2 tsp
Ginger garlic paste - 1/5 tbsp
Directions
1.Marinade the fish with salt, turmeric, lemon and ginger garlic paste and keep it aside for 30 minutes, Once done, in a pan, add coconut oil and half cook the fish in a pan and keep it aside.
2.In the same pan, add more coconut oil, fenugreek seeds, badi saunf, chopped ginger and garlic, onions and curry leaves and fry it for a few minutes until they are cooked. Add the chopped tomatoes and let it simmer for a bit. Add all the dry spices and coconut powder /fresh coconut continue cooking it . Add coriander leaves and your masala in now ready.
3.Now ,take the banana leaves and put it above the gas on low flame for 1-2 minutes per side (This will make it easy to fold and wrap the fish in the banana leaves).
4.Take banana leaves add the cooked masala followed by the half cooked fish and top it up once again with the cooked masala once again. Once done, cover and wrap the fish in banana leaves and let it cook on the pan for 8-9 minutes on until cooked. Enjoy.
