Kale Salad with a Creamy Tahini dressing

This is a refreshing salad with the perfect balance of proteins, vitamins, minerals and fibre. It's perfect for a light lunch or an evening snack. Its easy ,healthy and very delicious.




Ingredients for the dressing


  •   1/4 cup tahini paste (store bought)

  •   1 tbsp water

  •   2 lemons juiced

  •   1 tsp dijon mustard

  •   1/2 tsp parsley/coriander leaves

  •   1/2 tsp garlic chopped

  •   1 tbsp honey



Ingredients of the salad


  • 1 bunch kale ,finely chopped

  •   1 lemon juice

  •   1 tsp olive oil

  •   8-10 cherry tomatoes halved

  •   1 cucumbers chopped

  •   1 cup chickpeas boiled



Ingredients for the paneer/tofu


  •   16 oz extra firm tofu/paneee sliced

  •   1/4 cup light soy sauce

  •   1 tbsp olive oil

  •   1/2 tsp garlic chopped

  •   1/2 tsp paprika/chili flakes



Directions


1.In a bowl , add all the ingredients of the dressing ,mix it well and keep it aside.


2.Marinade the paneer with the above mentioned ingredients. In a grill pan ,add olive oil and grill it on both the sides until it’s done.


3.In a bowl, assemble the ingredients of the salad ,then add the dressing on top. Toss it well until its well combined. Add the grilled paneer/tofu and serve immediately.
