Kale & quinoa salad with a sweet & tangy dressing

Salad recipes are my favourite way to showcase vibrant in season produce.You don't need to do much to make them into a delicious meal.On beautiful warm summer days I like to be outside than in the kitchen and on cold winter nights,I like to brighten up our dinner table with ,lovely colourful greens and veggies.This gorgeous salad recipe is loved by all,can be prepared in fifteen minutes and gets swiped even faster by all :)







Some of the ingredients used in this recipe are





Ingredients for the dressing

  • Extra virgin olive oil- 1 tbsp

  • Lemon juice-1tbsp

  • Salt- a pinch

  • Dijo mustard-1 tbsp

  • Raw brown sugar-1.5 tbsp

Method


Mix all the ingredients in a bowl and give it a good mix and keep it aside.



Ingredients for the salad


  • Kale leaves- a handful

  • Red quinoa-boiled-2 tbsp

  • Red & yellow capsicum-1 tbsp each

  • Carrots-1 tbsp

  • Extra virgin olive oil-1 tbsp

  • Mint leaves-4-5

  • Roasted almonds-5-6

  • Raisins & cranberries- 1 tbsp

  • Pumpkin seeds- 1tsp

  • Fresh parmesan cheese-2 tbsp


Method


1.Put all of the ingredients in a bowl.Add the dressing & give it a good mix.Garnish with parmesan cheese and serve cold.
