Kale & Quinoa salad with a honey mustard dressing


This Kale and Quinoa Salad recipe has been recent favourite. It’s fresh ,quick, easy and nutrient dense and is perfect as a side dish.The secret to making raw kale taste really good is to massage it with olive oil and salt. This tenderises the kale, and makes raw kale really delicious!









Some of the ingredients used in this recipe are




Ingredients for the salad


Kale -75 gm

Quinoa (boiled & cooked)-60 gm

Olive oil- 1 tbsp

Dried cranberries-1tbsp

Carrots (Juliene)-40gm

Roasted almonds -5-6

Lemon -1

Red capsicum (chopped)-40 gm

Feta cheese-As per taste

Avocado -1/2


Ingredients for the dressing


Dijon mustard -1 tbsp

Raw honey /Brown sugar -1tsp or as per taste

Extra virgin olive oil-1tbsp

Salt & pepper -to taste


Directions


1.In a saucepan add water and bring it to boil. Add the quinoa and let it cook for 15-20 minutes or until done. Keep it aside to cool.


2.In a small bowl , add all the ingredients for the dressing .Mix it well and keep it aside.


3.In a salad bowl , add the Kale ,salt and olive oil . Give this a good massage . This is a very crucial step as this tenderises the Kale.


4.Add the rest of the ingredients followed by the dressing and give it a good mix . Serve cold
