Kale and quinoa salad with cranberries and feta cheese


This easy Kale and quinoa salad is packed with nutrients, is very easy to prepare and is perfect as a side dish.Full of fresh ingredients with lots of flavor and crunch, this is definitely one of my very favorite kale salad recipes!







Some of the ingredients used in this recipe are





Ingredients


Kale -75 gm

Boiled quinoa -60 gm

Olive oil -1 tbsp

Dried cranberries -1 tbsp

Carrots (julienne)-40gm

Almonds(roasted)-6-8

Lemon-1 tbsp

Red capsicum-40 gm

Feta cheese - as per taste

Avocado -1/2


For the dressing


Djorn mustard -1 tbsp

Extra virgin olive oil-1 tbsp

Salt & pepper -to taste

Raw brown sugar -1 tsp


Directions


1.In a bowl add all the ingredients of the dressing and keep it aside .


2.In another bowl add all the ingredients of the salad. Pour the dressing on top and mix it well.


3.Garnish with Feta cheese and serve cold .
