Juicy broccoli and cauliflower burgers with garlic, rosemary & sweet potato fries

These juicy and tasty veggie burgers are an absolute delight to prepare and eat.I have such lovey memories of my kids and myself plucking out all the fresh vegetables from our farm garden and preparing these together.These burgers are a perfect meal for a lovely sunny  afternoon when you want to eat something fresh, healthy and light.Serve them with crispy baked sweet potato fries or a fresh garden salad for a perfect meal with your family.







Some of the ingredients used in this recipe



Ingredients


Broccoli- (blanched)100 gm

Cauliflower- (boiled)100 gm

Onion- 1 chopped

Garlic-2-3

Olive oil- 1 tbsp

Salt and pepper to taste

Rosemary/thyme- 1 sprig

Healthy burger buns (whole wheat/multigrain)

Lettuce leaves – a few

Potato- boiled and mashed- 2

Parsley- (chopped)- 1.5 tbsp

Hummus- (optional) for a creamy texture/ mayonnaise - 1 tbsp

Onion rings- 2-3


Method


1.In a pan,add olive oil and fry the onion,rasemary and garlic for 2 minutes followed by broccoli and cauliflower.Let it cook for a few minutes.


2.Add the mashed potatoes ,parsley ,salt and pepper and cook for a few minutes.


3.Once done,make round patties of the mixture and fry them in little olive oil.


4.Slice the burger buns, toast it lightly and add some hummus/chutney/mayonnaise /butter (optional) on it followed by lettuce,onion rings and the cauliflower patty.Serve warm along with baked sweet potato fries or a fresh salad.



Health/Cooking Tips


1. Bake the sweet potato fries/wedges instead of deep frying it.


2.Use rock salt /pink salt instead of the regular iodised salt.


3.Pan fry the cutlets in olive oil or any other good quality oil and avoid refines oil.
