Honey walnut & Goat cheese salad with a French Vinaigrette


This salad is a delicious blend of fresh greens, creamy goat cheese, honey-glazed walnuts, and a tangy vinaigrette and is a perfect side dish which you can prepare for your Christmas parties this festive season!

Ingredients for the Salad


  • 65 gm butter lettuce

  • 8 honey glazed walnuts( crushed/ finely chopped)

  • 1 cucumber- peeled into thin ribbons (or thinly sliced using a peeler)

  • Goat cheese- as per taste

  • Avocado- 1/2


Ingredients for the French Vinaigrette/dressing


  • 2 tsp extra virgin olive oil

  • 1 tsp white wine vinegar

  • 1 teaspoon honey

  • Salt and pepper to taste

  • 1/2 tsp D’jorn mustard


Instructions


  • Prepare the Honey Walnuts: In a skillet over medium heat, toast the walnuts for about 2-3 minutes until they're fragrant. Add the honey to the skillet and stir continuously to coat the walnuts. .

  • Make the French Vinaigrette: In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, honey, salt, and pepper until well combined. Set aside.

  • Assemble the Salad: In a large salad bowl, toss the lettuce ,add the cucumber ribbons and avocado .

  • For the cheese- In a plate, add the crushed honey glazed walnuts, very gently make small round balls of the goat cheese and coat with the crushed walnuts. Make sure its coated well. (This process should be very gentle).

  • .Crumble the goat cheese over the salad. Add the honey-coated walnuts on top.

  • Drizzle with Dressing: Just before serving, drizzle the French vinaigrette over the salad. Toss gently to coat the greens evenly with the dressing.
